Slow-Roasted Salmon

Ingredients

  • cup extra-virgin olive oil
  • ¼ cup harissa paste
  • 1 clove garlic, grated
  • 1 whole lemon, halved
  • lb. skinless center-cut salmon fillet
  • to taste Kosher salt
  • mixed serving tender herbs (such as parsley, cilantro, dill, and/or chives)

Instructions

  1. Preheat the oven to 275°F.
  2. Whisk together olive oil, harissa, and grated garlic in a bowl.
  3. Pour half of the harissa oil into a baking dish and coat the bottom.
  4. Thinly slice half of the lemon, remove seeds, and scatter the slices in the dish.
  5. Season the salmon with salt on all sides and place it in the dish.
  6. Pour the remaining harissa oil over the salmon and spread it evenly.
  7. Roast the salmon for 15 minutes, then baste it with the oil from the dish.
  8. Return the salmon to the oven and continue roasting until it flakes easily, about 10-20 minutes.
  9. Break up the salmon into pieces and arrange it on a platter with lemon slices.
  10. Drizzle with remaining harissa oil and squeeze the other lemon half over it, then scatter herbs on top.
