Salmon Roasted in Butter

Ingredients

The salmon

  • 4 pieces skin-on salmon fillets

The butter mixture

  • ¼ cup unsalted butter
  • 3 Tbsp minced fresh dill
  • 1 tsp minced garlic
  • 1 Tbsp minced fresh parsley
  • to taste salt
  • to taste freshly ground black pepper

For serving

  • as needed lemon wedges or lemon zest

Instructions

  1. Preheat the oven to 475°F.
  2. Melt the butter in a small roasting dish and sprinkle dill evenly over it, then heat until sizzling.
  3. Place the salmon fillets skin-side up in the dish and roast for 4 minutes.
  4. Remove the dish, peel the skin off the salmon, and season the skinless side with salt and pepper.
  5. Flip the fillets, season the other side, and add garlic to the melted butter around the salmon.
  6. Return to the oven and cook until desired doneness, about 3 to 4 minutes longer.
  7. Plate the salmon and spoon the butter over it, then sprinkle with parsley and serve with lemon.
