Garlic Salmon with Butter and Lemon

Ingredients

  • 4 pieces 6-ounce skin-on salmon fillets
  • 4 tablespoons softened butter or canola oil butter spread
  • 4 large cloves garlic, chopped
  • 1 large lemon (zest and juice divided)
  • ¼ cup chopped fresh parsley, divided
  • ½ teaspoon freshly ground black pepper, divided
  • 1 pound fresh green beans, trimmed
  • 2 pints cherry tomatoes or grape tomatoes, left whole
  • 1 tablespoon extra-virgin olive oil
  • ½ teaspoon kosher salt plus additional to taste

Instructions

  1. Preheat the oven to 400°F and coat a large baking sheet with nonstick spray.
  2. Arrange the salmon fillets in the center of the sheet.
  3. In a bowl, combine softened butter, garlic, lemon zest, 2 tablespoons of parsley, and black pepper to create a paste, then rub it onto the salmon.
  4. In another bowl, toss green beans and tomatoes with olive oil, salt, and remaining black pepper, then arrange them around the salmon.
  5. Drizzle lemon juice over the salmon and vegetables.
  6. Bake for 16 to 20 minutes until the salmon flakes easily and reaches an internal temperature of 135 to 140°F.
  7. Let rest for 3 minutes, then garnish with remaining parsley and serve.
