Garlic Butter Salmon

Ingredients

The salmon and vegetables

  • 2-3 fillets salmon fillets
  • 1 pound mixed vegetables (asparagus, green beans, grape tomatoes, bell pepper)
  • to taste salt
  • to taste pepper

The garlic butter sauce

  • 4 tablespoons unsalted butter
  • 1 tablespoon garlic, finely diced
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh oregano, chopped
  • 2 tablespoons parsley, chopped
  • ½ teaspoon paprika
  • from ½ lemon lemon juice
  • 2-3 tablespoons chicken stock

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut 2-3 sheets of heavy-duty foil paper about 14x12 inches.
  3. Season the salmon with salt and pepper and place it in the center of the foil.
  4. Divide the vegetables and arrange them next to the salmon, seasoning with salt and pepper.
  5. In a small bowl, combine butter, minced garlic, thyme, oregano, parsley, and paprika, then microwave for 30 seconds.
  6. Mix in lemon juice and chicken stock.
  7. Brush the salmon and vegetables with the garlic butter sauce and top with sliced lemon.
  8. Seal the foil packs and bake for 10-12 minutes until the salmon is cooked through.
  9. Serve with sliced lemons and sprinkle with parsley.
