Hiyashi Chuka (Cold Ramen)

Ingredients

The noodles and toppings

  • 2 packets store bought ramen noodles
  • ½ cucumber
  • ½ tomato
  • 50 g ham
  • 2 eggs to make Kinshi Tamago

Sesame dressing

  • 1 tsp Chicken gara soup stock powder
  • 100 ml hot water
  • 4 tbs white sesame seeds paste
  • 2 tbs soy sauce
  • 3 tbs sugar
  • 3 tbs rice wine vinegar
  • 2 tsp sesame oil
  • 2 tsp sesame seeds

Soy sauce vinaigrette

  • 1 tsp Chicken gara soup stock powder
  • 100 ml hot water
  • 6 tbs soy sauce
  • 3 tbs vinegar
  • 3 tbs sugar
  • 2 tbs sesame seed oil

Garnish options

  • 2 tbs pickled ginger
  • 1 tbsp chopped scallions
  • 1 tbsp Japanese kewpie mayonnaise
  • ½ tsp mustard
  • 1 tsp white sesame seeds

Instructions

  1. Prepare the sauce by dissolving the chicken gara soup stock powder in hot water and mixing in the other ingredients. Chill in the fridge.
  2. Make Kinshi Tamago by frying the eggs thinly, cooling them, and slicing them into strips.
  3. Slice the tomato, shave the ham, and cut the cucumber into thin sticks.
  4. Cook the ramen noodles according to the package instructions and let them cool down.
  5. Assemble the dish by placing the chilled noodles on a plate and topping with cucumber, tomato, ham, and egg.
  6. Garnish with pickled ginger, lemon, scallions, mayonnaise, and mustard.
  7. Pour the sesame dressing over the top and sprinkle with sesame seeds.
