Ingredients

The chicken

  • 2-3 lbs boneless skinless chicken breasts

The spices

  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • ½ teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon black pepper
  • to taste kosher salt

The sauce

  • 16 oz green salsa
  • 8 oz cream cheese

For serving

  • cooked rice

Instructions

  1. Preheat the oven to 350℉.
  2. Place the chicken in a 9x13 pan and sprinkle with spices, except for salt.
  3. Pour the entire jar of green salsa over the chicken.
  4. Bake until the chicken reaches an internal temperature of 165℉, checking after 30 minutes.
  5. Remove the chicken and place it on a cutting board.
  6. Microwave the cream cheese until soft and easy to stir.
  7. Ladle some green chili sauce into the cream cheese and whisk until smooth.
  8. Combine the cream cheese mixture back into the baking pan and whisk everything until smooth.
  9. Shred the chicken and return it to the pan, tossing in the sauce.
  10. Season with kosher salt if needed and serve over rice.
