Ingredients

Seasonings

  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon sea salt

Chicken

  • 2 pounds boneless skinless chicken breast

Oil

  • ½ tablespoon olive oil

Cheese

  • 3 ounces shredded cheddar cheese

Vegetables

  • 2 medium tomatoes, sliced thin
  • 1 cup thinly sliced red onion
  • 6 cloves garlic, sliced thin
  • 1 medium jalapeño, sliced thin

Other

  • 1 lime juiced
  • to taste cilantro for garnish

Instructions

  1. Preheat the oven to 400°F.
  2. Mix the onion powder, chili powder, smoked paprika, and sea salt in a small bowl.
  3. Brush the chicken with olive oil and season with the spice mixture.
  4. Sprinkle cheese over the chicken and top with tomatoes, onion, garlic, and jalapeño.
  5. Bake for 25 minutes until the chicken is cooked through.
  6. Squeeze lime juice over the chicken and garnish with chopped cilantro.
