Ingredients

Brine

  • 2 cups buttermilk
  • ½ cup pickle juice or white vinegar
  • 2 tablespoons kosher salt

Chicken

  • 1 pound boneless skinless chicken breasts
  • 1 teaspoon paprika or smoked paprika
  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon kosher salt (only if using vinegar instead of pickle juice)
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon ground mustard
  • ¼ teaspoon parsley flakes

Instructions

  1. Whisk together buttermilk, pickle juice, and salt in a medium mixing bowl or baking dish.
  2. Soak chicken in the brine for 1-2 hours, then remove from buttermilk.
  3. Combine seasonings and massage over the chicken.
  4. Place chicken in the air fryer basket and cook for 9 minutes at 360°F.
  5. Flip the chicken and cook for another 9 minutes.
  6. Check internal temperature; if it reaches 160°F, remove and cover with foil for 5 minutes before slicing and serving.
  7. If not done, return to air fryer for a few more minutes without turning the heat back on.
