Ingredients

The chicken

  • 4 pieces chicken thighs, skin-on and bone-in

The seasoning

  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

The aromatics

  • 3 slices lemon
  • ¼ cup fresh coriander

The cooking fat

  • 2 tablespoons butter

Instructions

  1. Preheat the sous vide machine to 75°C (167°F).
  2. Season the chicken thighs with salt and pepper on both sides.
  3. Place the chicken in a vacuum bag with lemon slices and coriander, then seal the bag.
  4. Submerge the vacuum bag in the water bath and cook for 60 minutes.
  5. Remove the chicken from the bag, discard the aromatics, and sear in a skillet with butter for 2 minutes on each side.
  6. Serve immediately.
