Ingredients

The salad

  • 6 oz dry noodles (soba, ramen, rice)
  • 1 red pepper, thinly sliced
  • 3 cups red cabbage, thinly sliced
  • 1 large carrot, thinly sliced
  • ½ cup cilantro, roughly chopped
  • ¼ cup toasted walnuts

The sauce

  • ½ cup walnut butter
  • cup lime juice
  • 1 clove garlic
  • ¼ cup soy sauce
  • 1 Tbsp sesame oil
  • 1 Tbsp sriracha
  • 2 Tbsp honey

Instructions

  1. Cook the noodles according to the package instructions, then rinse and set aside.
  2. Prepare the sauce by whisking all sauce ingredients together in a bowl.
  3. In a large bowl, combine the noodles, sliced veggies, cilantro, and toasted walnuts.
  4. Pour the sauce over the noodle and veggie mixture, then toss until everything is fully coated.
  5. If desired, sprinkle sesame seeds on top.
  6. Serve the salad cold.
