Classic Potato Salad

Ingredients

The potatoes

  • 10 medium Yukon Gold potatoes
  • 1 cup Diamond Crystal kosher salt
  • ½ cup Morton kosher salt

The dressing

  • 1 cup mayonnaise
  • ¼ cup sweet relish
  • 3 Tbsp. yellow mustard
  • 2 Tbsp. Dijon mustard

The vegetables

  • 1 medium red bell pepper
  • ½ medium red onion
  • 2 stalks celery

The eggs

  • 4 large eggs

For serving

  • to taste Barbecue Seasoning, paprika, or freshly ground black pepper

Instructions

  1. Simmer potatoes in salted water until tender.
  2. Boil eggs for 10 minutes, then cool in ice water.
  3. Peel eggs, separate yolks and whites, and mash yolks with dressing ingredients.
  4. Add chopped vegetables to the dressing mixture.
  5. Cool and peel potatoes, then cut into pieces and mix with dressing.
  6. Fold in reserved egg whites and chill before serving.
  7. Sprinkle with seasoning before serving.
