Ingredients

  • 1 15 oz. can chickpeas
  • ¼ cup vegan mayonnaise
  • 2 tablespoons red onion, roughly chopped
  • 2 tablespoons fresh parsley or dill
  • ¼ cup finely chopped pickles or relish
  • 1 squeeze lime juice
  • ½ teaspoon Old Bay seasoning
  • ½ teaspoon Dijon mustard
  • to taste salt and pepper
  • 1 teaspoon capers

Instructions

  1. Combine all the salad ingredients in a food processor and pulse until combined, being careful not to make it too mushy.
  2. Scrape down the sides of the bowl and adjust seasonings to taste, pulsing again if necessary.
  3. Serve the salad in a lettuce wrap, sandwich, or on crackers as desired.
