Ingredients

The Topping

  • ¼ cup SPLENDA® Brown Sugar Blend
  • ¼ cup water
  • 1 tablespoon unsalted butter
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • teaspoon clove
  • a pinch of salt

The Cake

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • a pinch of salt
  • ½ cup SPLENDA® Naturals Sugar & Stevia Sweetener Blend
  • 3 eggs
  • cup plain yogurt
  • teaspoons vanilla extract
  • ½ cup canola oil
  • 2 bosc pears sliced into ¼ inch slices

Instructions

  1. Preheat the oven to 350°F and grease a 9" round cake pan.
  2. Arrange the pear slices at the bottom of the pan.
  3. In a small saucepan, combine the SPLENDA® Brown Sugar Blend, water, butter, cinnamon, nutmeg, clove, and salt. Cook over medium heat, whisking until the sauce thickens and the sweetener dissolves.
  4. Pour the caramel sauce over the arranged pears carefully.
  5. In a bowl, mix the flour, baking powder, and salt. Set aside.
  6. In a large bowl, whisk together the SPLENDA® Naturals Sugar & Stevia Sweetener Blend, eggs, yogurt, and vanilla until smooth.
  7. Gradually add the dry mixture to the wet mixture, whisking continuously.
  8. Add the oil and whisk until combined.
  9. Pour the batter over the caramelized pears, taking care not to disturb the arrangement.
  10. Bake for 45-50 minutes or until a toothpick comes out clean.
  11. Let the cake cool for 5-10 minutes before inverting it onto a serving platter.
