Ingredients

The pear topping

  • ¼ cup butter
  • ½ cup brown sugar
  • 4 large pears, sliced in half

The cake

  • ½ cup butter
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs, separated
  • ½ cup milk
  • ¼ teaspoon cream of tartar
  • cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt

Instructions

  1. Preheat the oven to 180°C (350°F) and prepare a springform cake pan.
  2. Melt butter in a non-stick pan, add brown sugar, stir until combined, and pour into the cake pan.
  3. Arrange pear slices in a single layer over the syrup in the pan.
  4. In a mixing bowl, cream together butter and sugar until fluffy, then add vanilla and egg yolks.
  5. In a separate bowl, beat egg whites with cream of tartar until fluffy.
  6. Gradually mix milk, flour, baking powder, and salt into the butter mixture, then fold in the egg whites.
  7. Pour the batter over the pears and smooth the top.
  8. Bake for 40-45 minutes or until a skewer comes out clean.
  9. Let the cake cool for 5 minutes before inverting onto a plate and cooling completely before slicing.
