Pear + Cinnamon Breakfast Cake

Ingredients

  • 2 pieces ripe pears, cored and chopped
  • 1 piece orange zest
  • 2 tbsp fresh orange juice
  • 1 cup roasted and unsalted almond butter
  • ¼ cup honey
  • 2 pieces eggs
  • 1 tsp vanilla beans or vanilla extract
  • 1 tbsp cinnamon
  • 1 tsp fresh ground nutmeg
  • ½ tsp salt

Instructions

  1. 1. Preheat the oven to 350°F (175°C).
  2. 2. In a food processor, combine one pear, orange zest, orange juice, and almond butter, and pulse until well combined.
  3. 3. Add honey, eggs, vanilla, cinnamon, nutmeg, and salt, and pulse until combined.
  4. 4. Pour the batter into a greased 8x8 glass pyrex dish.
  5. 5. Sprinkle the remaining pear over the batter and gently push the pears under the surface with a spatula.
  6. 6. Bake at 350°F for about 30 minutes.
  7. 7. Top with whipped cream or Greek yogurt before serving.
