Instructions
- Preheat the oven to 350°F.
- Brush a 9-inch round springform pan with melted butter and dust with flour.
- In a bowl, whisk together whole-wheat pastry flour, cinnamon, baking powder, and salt.
- Using an electric mixer, beat the butter and sugar until light and fluffy.
- Add the eggs and mix until well combined.
- Fold in the dry ingredients until just combined.
- Transfer the batter to the prepared pan and arrange the pear quarters on top, skin side up.
- Bake for about 1 hour, or until browned and a toothpick comes out clean.
- Let cool for 10 to 15 minutes before removing from the pan.
