Ingredients

The cake

  • ½ cup unsalted butter, at room temperature
  • 2 tablespoons melted unsalted butter
  • 1 cup whole-wheat pastry flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • ¼ teaspoon sea salt
  • 1 cup sugar
  • 2 large eggs
  • 6 small firm but ripe pears (such as Seckel), cored and cut lengthwise into quarters

For preparation

  • All-purpose flour for dusting

Instructions

  1. Preheat the oven to 350°F.
  2. Brush a 9-inch round springform pan with melted butter and dust with flour.
  3. In a bowl, whisk together whole-wheat pastry flour, cinnamon, baking powder, and salt.
  4. Using an electric mixer, beat the butter and sugar until light and fluffy.
  5. Add the eggs and mix until well combined.
  6. Fold in the dry ingredients until just combined.
  7. Transfer the batter to the prepared pan and arrange the pear quarters on top, skin side up.
  8. Bake for about 1 hour, or until browned and a toothpick comes out clean.
  9. Let cool for 10 to 15 minutes before removing from the pan.
