Ingredients

The cake

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¾ tsp sea salt
  • 2 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground cloves
  • 4 cups peeled, cored and diced apples
  • 1 Tbsp fresh lemon juice
  • 1 cup granulated sugar
  • ¼ cup packed light-brown sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup chopped pecans (optional)

The sticky brown sugar sauce

  • ½ cup unsalted butter, diced
  • 1 cup packed light-brown sugar
  • ¼ cup milk
  • ¼ tsp fine sea salt
  • ½ tsp vanilla extract

Instructions

  1. 1. Preheat the oven to 350°F and grease a 13 by 8-inch baking dish.
  2. 2. In a bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. 3. Toss the diced apples with lemon juice in a separate bowl.
  4. 4. In a mixer, cream together the granulated sugar, brown sugar, and butter until fluffy.
  5. 5. Add the eggs one at a time, mixing well after each addition.
  6. 6. Gradually add the flour mixture to the wet ingredients until just combined.
  7. 7. Fold in the apples and pour the batter into the prepared baking dish, spreading it evenly.
  8. 8. Bake for about 33-38 minutes until a toothpick comes out clean.
  9. 9. Let the cake cool for about 5 minutes, then cut into squares and serve warm with the brown sugar sauce.
  10. 10. For the sauce, combine butter, brown sugar, milk, and salt in a saucepan and bring to a boil, stirring occasionally.
  11. 11. Allow to boil for 1.5 minutes, then let cool slightly before serving over the cake.
