Ingredients

The pie crust

  • 1 recipe Homemade Pie Crust

The filling

  • 6 cups peeled pears, ½-inch chunks (about 5 pears)
  • ½ cup granulated sugar
  • ¼ cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • 1 tablespoon lemon juice
  • 1 cup salted caramel
  • 1 large egg beaten (for egg wash)
  • 1 tablespoon milk (for egg wash)
  • to taste optional coarse sugar (for sprinkling on crust)

Instructions

  1. Prepare the pie crust according to your recipe up to step 5.
  2. Mix the pears, sugar, flour, cinnamon, ginger, and lemon juice in a large bowl and refrigerate the filling.
  3. Preheat the oven to 400°F (204°C).
  4. Roll out one disc of chilled pie dough to fit a 9-inch pie dish and place it in the dish.
  5. Fill the crust with the pear mixture, discarding any excess liquid, and drizzle with salted caramel.
  6. Roll out the second disc of dough and cut it into strips to create a lattice top over the filling.
  7. Brush the top crust with egg wash and sprinkle with coarse sugar if desired.
  8. Bake the pie for 20 minutes at 400°F, then reduce the temperature to 350°F (177°C) and bake for an additional 30-35 minutes.
  9. Allow the pie to cool for 3 hours before serving.
