Instructions
- Prepare the pie crust according to your recipe up to step 5.
- Mix the pears, sugar, flour, cinnamon, ginger, and lemon juice in a large bowl and refrigerate the filling.
- Preheat the oven to 400°F (204°C).
- Roll out one disc of chilled pie dough to fit a 9-inch pie dish and place it in the dish.
- Fill the crust with the pear mixture, discarding any excess liquid, and drizzle with salted caramel.
- Roll out the second disc of dough and cut it into strips to create a lattice top over the filling.
- Brush the top crust with egg wash and sprinkle with coarse sugar if desired.
- Bake the pie for 20 minutes at 400°F, then reduce the temperature to 350°F (177°C) and bake for an additional 30-35 minutes.
- Allow the pie to cool for 3 hours before serving.
