Asian Pear Pie

The crust

Instructions
- 1. Mix the sliced pears, apples, brown sugar, crème fraîche, flour, ginger, lemon juice, and salt in a medium bowl and set aside.
- 2. Roll out the first pie crust to a 13-inch circle and place it in a pie dish, then chill in the fridge.
- 3. Roll out the second pie crust and create a topping as desired.
- 4. Pour the filling into the chilled pie crust and cover with the second crust, sealing the edges.
- 5. Freeze the assembled pie for about 20 minutes to firm it up.
- 6. Preheat the oven to 400°F and brush the top with egg wash, then sprinkle with turbinado sugar.
- 7. Bake for 30 minutes until lightly golden, then reduce the heat to 350°F and bake for an additional 30 minutes.
- 8. Allow the pie to cool for at least 30 minutes before serving.
