Asian Pear Pie

Ingredients

The filling

  • 2 to 3 pieces peeled firm Asian pears, cut into ½-inch slices
  • 2 to 3 pieces small apples, cut into ½-inch slices
  • 3 tablespoons all-purpose flour
  • ½ cup light or dark brown sugar
  • ½ cup crème fraîche or sour cream
  • 1 teaspoon freshly grated ginger
  • Juice from ½ lemon
  • a pinch salt

The crust

  • 2 pieces homemade or store-bought pie crusts
  • 1 large egg, beaten (for egg wash)
  • 1 to 2 teaspoons turbinado sugar (for topping)

Instructions

  1. 1. Mix the sliced pears, apples, brown sugar, crème fraîche, flour, ginger, lemon juice, and salt in a medium bowl and set aside.
  2. 2. Roll out the first pie crust to a 13-inch circle and place it in a pie dish, then chill in the fridge.
  3. 3. Roll out the second pie crust and create a topping as desired.
  4. 4. Pour the filling into the chilled pie crust and cover with the second crust, sealing the edges.
  5. 5. Freeze the assembled pie for about 20 minutes to firm it up.
  6. 6. Preheat the oven to 400°F and brush the top with egg wash, then sprinkle with turbinado sugar.
  7. 7. Bake for 30 minutes until lightly golden, then reduce the heat to 350°F and bake for an additional 30 minutes.
  8. 8. Allow the pie to cool for at least 30 minutes before serving.
