Instructions
- Preheat the oven to 425ºF and prepare the oven racks.
- Peel the apples and cut them into large chunks, then toss with sugar, cinnamon, cloves, lemon zest, lemon juice, and tapioca in a bowl.
- Roll out the first pie dough round and place it in the pie plate, then refrigerate it.
- Roll out the second pie dough round slightly larger than the first.
- Taste the apple mixture and adjust sweetness if necessary, then fill the pie plate with the apples and scatter butter on top.
- Cover with the second pie dough, trim excess, and crimp the edges.
- Brush the top with egg wash and make slits in the crust.
- Bake at 425ºF for 20 minutes, then reduce the temperature to 350ºF and continue baking for 30 minutes to 1 hour until golden.
