Basic Apple Pie

Ingredients

The pie crust

  • 2 rounds pie dough

The filling

  • 10 apples apples (Cortland and Honey Crisp recommended)
  • ¾ cup sugar
  • 1 teaspoon cinnamon
  • 1 grating fresh cloves (optional)
  • 1 zest lemon (optional)
  • 1 juice lemon
  • 2 tablespoons tapioca or flour
  • 2 tablespoons butter
  • 1 egg egg mixed with cream for wash
  • 1 tablespoon cream

Instructions

  1. Preheat the oven to 425ºF and prepare the oven racks.
  2. Peel the apples and cut them into large chunks, then toss with sugar, cinnamon, cloves, lemon zest, lemon juice, and tapioca in a bowl.
  3. Roll out the first pie dough round and place it in the pie plate, then refrigerate it.
  4. Roll out the second pie dough round slightly larger than the first.
  5. Taste the apple mixture and adjust sweetness if necessary, then fill the pie plate with the apples and scatter butter on top.
  6. Cover with the second pie dough, trim excess, and crimp the edges.
  7. Brush the top with egg wash and make slits in the crust.
  8. Bake at 425ºF for 20 minutes, then reduce the temperature to 350ºF and continue baking for 30 minutes to 1 hour until golden.
