The egg wash topping

Instructions
- Make the pie crust and prepare the pie pan.
- Roll out the pie crust into about 12 inches and cut the dough into long strips for the lattice.
- Transfer the dough to a 9-inch pie plate and refrigerate for at least 45 minutes.
- Peel, core, and slice the apples into ¼-inch to ½-inch thick slices and place them in lemon water.
- Drain the apple slices and mix them with brown sugar, granulated sugar, spices, salt, lemon juice, and cornstarch.
- Place the filling in the pie pan, arrange the apples, and add butter pieces on top.
- Cover with pie strips or a whole top pie crust, brush with egg wash, and sprinkle with sugar.
- Cover the edge of the crust with foil to prevent excessive browning, if desired.
- Preheat the oven to 375°F and bake the pie for 40 to 45 minutes until bubbly and golden brown.
- Remove the foil during the last 15 minutes of baking and serve warm with ice cream.
