Instructions
- Preheat the oven to 375°F.
- Mix granulated sugar, brown sugar, flour, cinnamon, ginger, and nutmeg in a small bowl and set aside.
- Toss the sliced apples with lemon juice in a large bowl and coat with the sugar mixture.
- Place one pie crust in the bottom of a 9-inch pie pan and fill with the apple mixture, adding a piece of butter on top.
- Roll out the second crust and place it over the filling, sealing the edges and cutting slits in the top.
- Brush the top crust with beaten egg white and sprinkle with sugar, then cover the edges loosely with foil.
- Bake for 25 minutes, then remove the foil and bake for an additional 20 minutes until golden brown and bubbling.
- Cool on a wire rack until warm, then cut into 8 pieces and serve with a scoop of vanilla ice cream.
