Ingredients

The pie

  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 3 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • 6 to 7 cups tart apples, peeled and thinly sliced
  • 1 tablespoon lemon juice
  • 2 9-inch pie crusts thawed
  • 1 tablespoon butter
  • 1 egg white

For serving

  • 1 quart vanilla ice cream

Instructions

  1. Preheat the oven to 375°F.
  2. Mix granulated sugar, brown sugar, flour, cinnamon, ginger, and nutmeg in a small bowl and set aside.
  3. Toss the sliced apples with lemon juice in a large bowl and coat with the sugar mixture.
  4. Place one pie crust in the bottom of a 9-inch pie pan and fill with the apple mixture, adding a piece of butter on top.
  5. Roll out the second crust and place it over the filling, sealing the edges and cutting slits in the top.
  6. Brush the top crust with beaten egg white and sprinkle with sugar, then cover the edges loosely with foil.
  7. Bake for 25 minutes, then remove the foil and bake for an additional 20 minutes until golden brown and bubbling.
  8. Cool on a wire rack until warm, then cut into 8 pieces and serve with a scoop of vanilla ice cream.
