Ingredients

The filling

  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 3 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • 6 to 7 cups tart apples, peeled and thinly sliced
  • 1 tablespoon lemon juice

The crust

  • 2 9-inch pie crusts
  • 1 tablespoon butter
  • 1 egg white for egg wash

Instructions

  1. Preheat the oven to 375°F.
  2. Mix granulated sugar, brown sugar, flour, cinnamon, ginger, and nutmeg in a small bowl.
  3. Toss sliced apples with lemon juice in a large bowl and coat with the sugar mixture.
  4. Place one pie crust in the bottom of a 9-inch pie dish and fill with the apple mixture, adding butter on top.
  5. Roll out the second crust and cover the filling, trimming as necessary.
  6. Seal the edges and cut slits in the top crust.
  7. Brush the top with beaten egg white and sprinkle with sugar.
  8. Cover the edges with foil and bake for 25 minutes.
  9. Remove the foil and continue baking until the crust is golden and the filling is bubbling, about 20 more minutes.
  10. Cool on a wire rack before serving.
