Instructions
- Preheat the oven to 375°F.
- Mix granulated sugar, brown sugar, flour, cinnamon, ginger, and nutmeg in a small bowl.
- Toss sliced apples with lemon juice in a large bowl and coat with the sugar mixture.
- Place one pie crust in the bottom of a 9-inch pie dish and fill with the apple mixture, adding butter on top.
- Roll out the second crust and cover the filling, trimming as necessary.
- Seal the edges and cut slits in the top crust.
- Brush the top with beaten egg white and sprinkle with sugar.
- Cover the edges with foil and bake for 25 minutes.
- Remove the foil and continue baking until the crust is golden and the filling is bubbling, about 20 more minutes.
- Cool on a wire rack before serving.
