Ingredients

The filling

  • cup packed brown sugar
  • cup cane sugar
  • 1 tablespoon Apple Pie Spice
  • ¼ teaspoon sea salt
  • 4 pounds good baking apples, peeled, cored, and thinly sliced
  • 1 tablespoon fresh lemon juice
  • 3 tablespoons water
  • 2 tablespoons cornstarch
  • ½ teaspoon lemon zest
  • ½ teaspoon vanilla extract

The crust

  • 1 recipe Easy Pie Crust, chilled at least 2 hours
  • 1 large egg
  • optional Coarse sugar

For serving

  • Vanilla ice cream

Instructions

  1. Whisk together the brown sugar, cane sugar, apple pie spice, and salt in a large pot.
  2. Add the apple slices and lemon juice, toss to coat, and let sit for 30 minutes.
  3. Stir together water and cornstarch in a small bowl until smooth.
  4. Cook the apples over medium-low heat, stirring until they soften slightly, about 5 minutes.
  5. Raise the heat, add the cornstarch mixture, and cook until the juices bubble and thicken.
  6. Remove from heat and stir in lemon zest and vanilla, then allow to cool completely.
  7. Roll out the bottom crust, cover, and chill for 30 minutes.
  8. Preheat the oven to 425°F with a baking sheet inside.
  9. Roll out the top crust and chill while the bottom crust is chilling.
  10. Assemble the pie by pouring in the cooled filling and covering with the top crust.
  11. Seal the edges, brush with egg wash, and sprinkle with coarse sugar if using.
  12. Cut steam vents in the crust and place the pie on the hot baking sheet.
  13. Bake for 20 minutes, then reduce temperature to 375°F and bake for 45 to 55 minutes.
  14. Allow to cool completely before slicing and serving with vanilla ice cream.
