Instructions
- Whisk together the brown sugar, cane sugar, apple pie spice, and salt in a large pot.
- Add the apple slices and lemon juice, toss to coat, and let sit for 30 minutes.
- Stir together water and cornstarch in a small bowl until smooth.
- Cook the apples over medium-low heat, stirring until they soften slightly, about 5 minutes.
- Raise the heat, add the cornstarch mixture, and cook until the juices bubble and thicken.
- Remove from heat and stir in lemon zest and vanilla, then allow to cool completely.
- Roll out the bottom crust, cover, and chill for 30 minutes.
- Preheat the oven to 425°F with a baking sheet inside.
- Roll out the top crust and chill while the bottom crust is chilling.
- Assemble the pie by pouring in the cooled filling and covering with the top crust.
- Seal the edges, brush with egg wash, and sprinkle with coarse sugar if using.
- Cut steam vents in the crust and place the pie on the hot baking sheet.
- Bake for 20 minutes, then reduce temperature to 375°F and bake for 45 to 55 minutes.
- Allow to cool completely before slicing and serving with vanilla ice cream.
