  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • ½ teaspoon lemon zest
  • ½ teaspoon vanilla extract

Instructions

  1. Prepare the apples by peeling, coring, and thinly slicing them.
  2. In a large pot, whisk together the brown sugar, cane sugar, apple pie spice, and salt.
  3. Add the apple slices and lemon juice to the pot, tossing until well coated.
  4. Let the apples sit for 30 minutes to draw out juices, stirring after 15 minutes.
  5. In a small bowl, mix the cornstarch and water until smooth.
  6. Set the pot over medium-low heat and cook the apples, stirring, until they soften slightly (about 5 minutes).
  7. Raise the heat to medium and pour in the cornstarch mixture, cooking until the juices bubble and thicken (about 30 seconds).
  8. Remove from heat and stir in the lemon zest and vanilla extract.
  9. Allow the filling to cool completely before using.
