Apple Pie Filling

Instructions
- Prepare firm, crisp apples and slice them into ¼-½ inch pieces, soaking in water with lemon juice to prevent browning.
- Blanch the apple slices in boiling water for 1 minute, then drain and keep them warm.
- In a large kettle, combine sugar, Ultra Gel, spices, cold water, and apple juice, stirring and cooking on medium-high heat until thick and bubbly.
- Add lemon juice and boil the mixture for 1 minute while stirring constantly.
- Fold in the drained apple slices immediately and fill jars with the mixture, leaving 1 inch of headspace.
- Adjust lids and process jars in a water bath according to altitude recommendations.
