Ingredients

  • 6 quarts blanched, sliced fresh apples
  • cups granulated sugar
  • cups Ultra Gel or Clear Jel
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • cups cold water
  • 5 cups apple juice
  • ¾ cups bottled lemon juice

Instructions

  1. Prepare firm, crisp apples and slice them into ¼-½ inch pieces, soaking in water with lemon juice to prevent browning.
  2. Blanch the apple slices in boiling water for 1 minute, then drain and keep them warm.
  3. In a large kettle, combine sugar, Ultra Gel, spices, cold water, and apple juice, stirring and cooking on medium-high heat until thick and bubbly.
  4. Add lemon juice and boil the mixture for 1 minute while stirring constantly.
  5. Fold in the drained apple slices immediately and fill jars with the mixture, leaving 1 inch of headspace.
  6. Adjust lids and process jars in a water bath according to altitude recommendations.
