Classic Apple Pie

Instructions
- Preheat the oven to 375°F and prepare a baking sheet with foil.
- In a bowl, toss sliced apples with lemon juice and cinnamon.
- In a saucepan, melt butter and whisk in flour until smooth; cook briefly.
- Add water, granulated sugar, and brown sugar to the saucepan and simmer while stirring.
- Pour the sauce over the apples and mix well.
- Roll out the bottom crust and place it in a pie plate, then fill with the apple mixture.
- Roll out the top crust and either create a lattice or cover the filling, cutting slits for steam.
- Seal the edges of the crust and optionally brush with an egg wash.
- Bake for 65-75 minutes until golden and bubbly, then cool completely before serving.
