Classic Apple Pie

Ingredients

Pie

  • 1 double pie crust
  • 6 large apples (about 2½ pounds, peeled, cored, sliced 1/8-inch thick)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon ground cinnamon
  • 1 egg for egg wash (optional)
  • 1 tablespoon water (for egg wash)

Sauce

  • 6 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 3 tablespoons water
  • cup granulated sugar
  • cup packed light or dark brown sugar

Instructions

  1. Preheat the oven to 375°F and prepare a baking sheet with foil.
  2. In a bowl, toss sliced apples with lemon juice and cinnamon.
  3. In a saucepan, melt butter and whisk in flour until smooth; cook briefly.
  4. Add water, granulated sugar, and brown sugar to the saucepan and simmer while stirring.
  5. Pour the sauce over the apples and mix well.
  6. Roll out the bottom crust and place it in a pie plate, then fill with the apple mixture.
  7. Roll out the top crust and either create a lattice or cover the filling, cutting slits for steam.
  8. Seal the edges of the crust and optionally brush with an egg wash.
  9. Bake for 65-75 minutes until golden and bubbly, then cool completely before serving.
