Ingredients

Pie Crust

  • cups all-purpose flour
  • 2 tablespoons white granulated sugar
  • teaspoons kosher salt
  • 1 cup unsalted butter, cold
  • ¾ cup very cold water, divided

Apple Pie Filling

  • ½ small lemon, juiced
  • 3-4 whole medium to large apples (pink lady, gala, honeycrisp)
  • ¼ cup all-purpose flour
  • ½ cup light brown sugar
  • teaspoons ground cinnamon
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon kosher salt
  • 2 tablespoons crème fraîche or sour cream
  • 1 large egg, beaten (for egg wash)
  • 1 tablespoon turbinado sugar (optional)

Instructions

  1. Prepare the pie crust by mixing flour, sugar, and salt in a bowl.
  2. Grate cold butter into the flour mixture and chill in the freezer for 10 minutes.
  3. Mix the butter into the flour until it resembles small peas, then gradually add cold water until a dough forms.
  4. Divide the dough into two discs, wrap in plastic, and refrigerate for at least 1 hour.
  5. For the filling, peel and slice the apples, then toss with lemon juice, flour, brown sugar, cinnamon, vanilla, and salt.
  6. Roll out the first disc of dough and fit it into a pie pan, then fill with the apple mixture.
  7. Roll out the second disc and cut into strips for a lattice top, weaving them over the filling.
  8. Chill the assembled pie in the freezer for 30 minutes, then preheat the oven to 400°F.
  9. Brush the pie with egg wash and sprinkle with turbinado sugar before baking.
  10. Bake for 20-25 minutes at 400°F, then reduce the temperature to 350°F and bake for an additional 40-45 minutes.
  11. Let the pie cool for at least 2 hours before slicing.
