Homemade Apple Pie

Ingredients

The crust

  • 3 cups all-purpose flour
  • ½ tsp salt
  • 1 cup cold vegan butter or regular butter or shortening
  • 1 cup ice-cold water

The filling

  • 6 granny smith apples
  • 4 tbsp vegan butter or regular butter
  • 1 cup brown sugar
  • 3 tsp cinnamon
  • 2 tbsp lemon juice
  • 1 tbsp vanilla
  • ¼ cup all-purpose flour
  • ¼ cup granulated sugar

The egg wash (optional)

  • 1 egg
  • 2 tbsp almond milk or any plant-based milk
  • extra tbsp granulated sugar for topping

Instructions

  1. Prepare the pie crust by mixing flour and cold butter until it resembles coarse sand, then add salt dissolved in ice-cold water and form a dough.
  2. Cover the dough and let it rest in the fridge for 30-45 minutes.
  3. Core and slice the apples into thin pieces.
  4. Melt butter in a pot, add apples, and cook until slightly soft.
  5. Add brown sugar, lemon juice, cinnamon, and vanilla to the apples and cook for another 5 minutes.
  6. Mix granulated sugar and flour, sprinkle over the apples, and stir until thickened.
  7. Transfer the apple filling to a dish and cool in the fridge.
  8. Roll out half of the pie dough and place it in a pie dish.
  9. Trim the edges of the dough and fill with the cooled apple mixture.
  10. Roll out the second half of the dough, cut into strips, and create a lattice top over the filling.
  11. Trim the edges of the lattice and prepare an egg wash with egg and milk.
  12. Brush the lattice with egg wash and refrigerate for 20-30 minutes.
  13. Preheat the oven to 400°F and prepare a baking tray.
  14. Brush the pie with egg wash again and sprinkle sugar on top.
  15. Bake for 55-60 minutes until golden brown.
