Instructions
- Preheat the oven to 400°F (204°C) and place a rack in the bottom third of the oven.
- Prepare the filling by peeling and slicing the apples, then toss them with cinnamon, pumpkin pie spice, salt, sugar, pumpkin butter, and flour.
- To prepare the crust, whisk together flour, salt, pumpkin pie spice, and cinnamon in a bowl.
- Add cold butter and mix until crumbly, then add ice water gradually until a loose dough forms.
- Transfer the dough to a floured surface, mold it gently, and divide it into two pieces, making one slightly larger for the bottom crust.
- Roll out the larger piece and place it in a pie pan, leaving excess hanging over the edges.
- Add the apple filling, reserving excess liquid, then roll out the second piece of dough for the top.
- Create a lattice top or cover the filling with the second crust, poking holes for steam to escape.
- Crimp the edges and brush the top with water or dairy-free milk, then sprinkle with sugar.
- Bake for 45-50 minutes until golden brown, covering edges with foil if they brown too quickly.
- Let the pie cool completely before slicing, at least 3-4 hours.
