Vegan Apple Pie

Instructions
- Combine chopped apples with lemon juice, sugar, cinnamon, nutmeg, and salt in a bowl.
- Melt vegan butter in a pan, add the apple mixture, and cook on medium-low for 7-8 minutes until slightly tender.
- Stir in the cornstarch slurry and vanilla extract, then remove from heat and let cool for 15-20 minutes.
- Preheat the oven to 425°F (220°C) and prepare the pie crust in a pie dish.
- Fill the base crust with the apple mixture and smooth the top.
- Roll out the second crust, cut into strips, and create a lattice pattern on top of the pie.
- Brush with a vegan egg wash and sprinkle sugar on top.
- Bake for 15 minutes at 425°F, then reduce temperature to 350°F (180°C) and bake for an additional 45 minutes.
- Allow the pie to cool completely for at least 2 hours at room temperature and then refrigerate for at least 4 hours before serving.
