Vegan Apple Pie

Ingredients

The crust

  • 2 crusts vegan pie crusts

The filling

  • 3 lbs apples, peeled, cored and chopped
  • 2 ½ tablespoons lemon juice
  • 1 cup cane sugar
  • 2 teaspoons ground cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon sea salt
  • ¼ cup vegan butter
  • ½ tablespoon vanilla extract
  • 1 ½ tablespoons cornstarch
  • 1 ½ tablespoons water

Instructions

  1. Combine chopped apples with lemon juice, sugar, cinnamon, nutmeg, and salt in a bowl.
  2. Melt vegan butter in a pan, add the apple mixture, and cook on medium-low for 7-8 minutes until slightly tender.
  3. Stir in the cornstarch slurry and vanilla extract, then remove from heat and let cool for 15-20 minutes.
  4. Preheat the oven to 425°F (220°C) and prepare the pie crust in a pie dish.
  5. Fill the base crust with the apple mixture and smooth the top.
  6. Roll out the second crust, cut into strips, and create a lattice pattern on top of the pie.
  7. Brush with a vegan egg wash and sprinkle sugar on top.
  8. Bake for 15 minutes at 425°F, then reduce temperature to 350°F (180°C) and bake for an additional 45 minutes.
  9. Allow the pie to cool completely for at least 2 hours at room temperature and then refrigerate for at least 4 hours before serving.
