Ingredients

The crust

  • 1 recipe vegan gluten-free pie crust

The filling

  • 2 pounds apples
  • ¾ cup maple syrup
  • ½ cup cashew butter
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla extract
  • ¼ teaspoon sea salt
  • ¼ cup water
  • 1 tablespoon maple syrup

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Peel and slice the apples thinly, about ⅛ inch thick.
  3. Whisk together the maple syrup, cashew butter, cinnamon, vanilla extract, and sea salt in a bowl until smooth.
  4. Mix the sliced apples into the filling mixture to coat them.
  5. Transfer the raw pie crust into a pie dish.
  6. Pour the apple filling into the raw pie crust.
  7. If using a top crust, create a lattice by cutting strips of dough and weaving them over the filling.
  8. Optionally, brush the top with a mixture of water and maple syrup.
  9. Bake for 40-45 minutes until golden brown.
  10. Allow to cool before serving.
