Deconstructed Healthy Apple Pie

Ingredients

  • 4 large apples, peeled and sliced
  • 1 cup gluten-free baking flour or regular all-purpose flour
  • ¾ cup coconut sugar
  • 5 tablespoons vegan butter or regular butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 teaspoons cinnamon
  • ½ teaspoon salt
  • ½ cup chopped pecans

Instructions

  1. Preheat the oven to 350°F.
  2. Grease a 9-inch pie dish or baking dish well and set aside.
  3. Peel the apples and slice them into pieces about ½ inch thick.
  4. Place the sliced apples in the dish and sprinkle 1 tablespoon of coconut sugar and 1 teaspoon of cinnamon over them.
  5. In a medium bowl, combine the flour, coconut sugar, melted butter, vanilla extract, and salt.
  6. Stir well, then add in the egg and pecans, mixing until incorporated.
  7. Scoop the batter on top of the apples, using your hands to spread it evenly.
  8. Bake for 45-50 minutes, until the crust is golden.
