Deconstructed Healthy Apple Pie

Instructions
- Preheat the oven to 350°F.
- Grease a 9-inch pie dish or baking dish well and set aside.
- Peel the apples and slice them into pieces about ½ inch thick.
- Place the sliced apples in the dish and sprinkle 1 tablespoon of coconut sugar and 1 teaspoon of cinnamon over them.
- In a medium bowl, combine the flour, coconut sugar, melted butter, vanilla extract, and salt.
- Stir well, then add in the egg and pecans, mixing until incorporated.
- Scoop the batter on top of the apples, using your hands to spread it evenly.
- Bake for 45-50 minutes, until the crust is golden.
