Ingredients

The crust

  • 2 cups wholewheat pastry flour
  • ½ teaspoon salt
  • ¾ cup unsalted butter, cold and cubed
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoons apple cider vinegar
  • 3 tablespoons ice cold water

The filling

  • 8 medium apples, sliced
  • 1 tablespoon lemon juice
  • ½ cup coconut sugar or brown sugar
  • 3 tablespoons maple syrup
  • 2 tablespoons cornstarch
  • 2 teaspoons cinnamon
  • ½ teaspoon nutmeg

For the egg wash

  • 1 large egg
  • 1 tablespoon milk

Instructions

  1. 1. Make the pie crust by mixing flour and salt, then adding cold butter until crumbly.
  2. 2. Combine maple syrup, vanilla, and vinegar, then add to the flour mixture and mix with ice cold water until smooth.
  3. 3. Divide the dough, shape into disks, wrap in plastic, and refrigerate for an hour.
  4. 4. Prepare the filling by mixing sliced apples with lemon juice, sugar, maple syrup, cornstarch, cinnamon, and nutmeg.
  5. 5. Preheat the oven to 200C/400F.
  6. 6. Roll out one disk of dough and transfer it to a pie dish, trimming excess.
  7. 7. Fill the pie crust with the apple filling.
  8. 8. Roll out the second disk, cut into strips, and create a lattice pattern on top.
  9. 9. Brush the lattice with the egg wash and sprinkle with sugar if desired.
  10. 10. Bake the pie for 45-50 minutes until golden brown.
  11. 11. Let the pie cool before serving.
