Healthy Apple Pie

For the egg wash

Instructions
- 1. Make the pie crust by mixing flour and salt, then adding cold butter until crumbly.
- 2. Combine maple syrup, vanilla, and vinegar, then add to the flour mixture and mix with ice cold water until smooth.
- 3. Divide the dough, shape into disks, wrap in plastic, and refrigerate for an hour.
- 4. Prepare the filling by mixing sliced apples with lemon juice, sugar, maple syrup, cornstarch, cinnamon, and nutmeg.
- 5. Preheat the oven to 200C/400F.
- 6. Roll out one disk of dough and transfer it to a pie dish, trimming excess.
- 7. Fill the pie crust with the apple filling.
- 8. Roll out the second disk, cut into strips, and create a lattice pattern on top.
- 9. Brush the lattice with the egg wash and sprinkle with sugar if desired.
- 10. Bake the pie for 45-50 minutes until golden brown.
- 11. Let the pie cool before serving.
