Instructions
- Whisk together the flours, baking powder, and salt in a large bowl.
- In a separate bowl, whisk the oil, buttermilk, and egg, then combine with the flour mixture to form a dough.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- Preheat the oven to 375°F.
- Roll out the dough to fit a 9-inch springform pan, leaving excess hanging over the edges.
- Prepare the apples by slicing them thinly and layering them in the pan.
- Sprinkle half the raisins and half the pecans in the middle of the apple layers.
- In a bowl, mix the date paste, arrowroot, and eggs until smooth, then add the remaining filling ingredients.
- Pour the filling mixture over the apples, ensuring it seeps between the slices.
- Bake for 40-45 minutes until the crust is golden brown.
- Turn off the oven and let the pie cool inside for a couple of hours before refrigerating for at least 6 hours.
