Ingredients

Crust

  • 1 cup spelt flour
  • ¾ cup whole wheat flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 4 tbsp extra-virgin olive oil
  • ¾ cup buttermilk
  • 1 egg egg

Filling

  • 1 cup buttermilk
  • 1 cup coconut water
  • ½ cup egg whites
  • 2 eggs eggs
  • ¼ cup date paste
  • 3 tbsp arrowroot flour
  • 1 tsp cinnamon
  • to taste freshly grated nutmeg
  • 1 vanilla bean seeds from vanilla bean or pure vanilla extract
  • 8 large apples (assorted varieties)
  • ½ cup raisins
  • ½ cup pecans, coarsely chopped

Instructions

  1. Whisk together the flours, baking powder, and salt in a large bowl.
  2. In a separate bowl, whisk the oil, buttermilk, and egg, then combine with the flour mixture to form a dough.
  3. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  4. Preheat the oven to 375°F.
  5. Roll out the dough to fit a 9-inch springform pan, leaving excess hanging over the edges.
  6. Prepare the apples by slicing them thinly and layering them in the pan.
  7. Sprinkle half the raisins and half the pecans in the middle of the apple layers.
  8. In a bowl, mix the date paste, arrowroot, and eggs until smooth, then add the remaining filling ingredients.
  9. Pour the filling mixture over the apples, ensuring it seeps between the slices.
  10. Bake for 40-45 minutes until the crust is golden brown.
  11. Turn off the oven and let the pie cool inside for a couple of hours before refrigerating for at least 6 hours.
