  • cup whole rolled oats
  • cup brown sugar
  • ¼ teaspoon sea salt
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • cup firm coconut oil

The filling

  • 3 pounds Granny Smith or Gala apples
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla
  • 2 tablespoons maple syrup
  • 1 tablespoon cornstarch

Instructions

  1. Prepare the crust by whisking together the flours, sugar, and salt, then mixing with coconut oil and ice water to form a dough.
  2. Chill the dough for 30 minutes, then roll it out and transfer it to a pie plate, trimming the edges.
  3. For the crumble topping, pulse together the flour, oats, brown sugar, salt, cinnamon, and spices in a food processor, then mix in coconut oil.
  4. For the filling, combine sliced apples with lemon juice, vanilla, maple syrup, and cornstarch in a bowl.
  5. Preheat the oven to 375°F and fill the pie crust with the apple mixture, topping it with the crumble.
  6. Bake for 30 minutes, cover with foil, rotate, and bake for an additional 15 to 20 minutes until the apples are tender.
  7. Let the pie cool for an hour before serving.
