Ingredients

Apple Filling

  • 2 apples cored, peeled and sliced
  • 2 tablespoons oat flour
  • 2 tablespoons coconut sugar
  • ¼ teaspoon cinnamon
  • ½ teaspoon all spice

Bars

  • 1 ¼ cups old fashioned oats
  • 2 ⅔ cups oat flour
  • 2 ½ teaspoons baking powder
  • ¼ cup coconut sugar
  • ¼ cup maple syrup
  • ½ teaspoon fine sea salt
  • ½ cup coconut oil
  • 1 flax egg made from flaxseed
  • 1 teaspoon vanilla extract

Topping

  • to taste vegan salted caramel sauce

Instructions

  1. Preheat the oven to 350°F (177°C) and prepare an 8x8 baking dish.
  2. Mix the apple filling ingredients together and set aside.
  3. In a bowl, combine all dry ingredients for the bars, then add wet ingredients and mix thoroughly for about two minutes.
  4. Press half of the crumble mixture into the bottom of the baking dish to form a crust and bake for 10 minutes.
  5. Remove the crust, top with the apple filling, and add the remaining crumble mixture on top, pressing slightly.
  6. Bake for 25 minutes until golden and puffy, then cool for 20 minutes before refrigerating for at least an hour.
  7. Slice into bars and drizzle with salted caramel sauce when serving.
