Vegan Apple Pie Bars

The filling

Pazazz apples (or Honeycrisp), diced

Instructions
- Preheat the oven to 350°F.
- Line an 8x8 baking dish with parchment paper.
- In a food processor, blend the oats into a flour.
- Add almond flour and sea salt to the blended oats along with the remaining bar ingredients.
- Reserve ½ cup of the mixture for the crumble topping and press the rest evenly into the baking dish.
- In a pan over low heat, melt coconut oil and add diced apples, maple syrup, and cinnamon.
- Sauté the apple mixture for about 3-5 minutes.
- In a small bowl, mix arrowroot or cornstarch with 2 tbsp water until smooth, then add to the apple mixture.
- Remove the apple mixture from heat after 2 minutes and let it thicken for 5 minutes.
- Pour the apple mixture over the cookie base and sprinkle the reserved oat mixture on top.
- Bake for 30 minutes and let cool completely before slicing into squares.
