Instructions
- Preheat the oven to 350°F (176°C) and line an 8x8-inch baking dish with parchment paper.
- In a separate baking dish, combine apples with coconut sugar, cinnamon, sea salt, lemon juice, melted coconut oil, and cornstarch, then toss to mix.
- Cover with foil and bake for 18 minutes, then remove the foil and bake for an additional 4-5 minutes until apples are tender.
- While the apples bake, blend oats, almonds, sea salt, and coconut sugar in a food processor until fine.
- Add melted coconut oil and pulse until a crumbly dough forms.
- Press the mixture into the prepared baking dish and bake for 15 minutes, then increase the heat to 375°F (190°C) and bake for another 5-8 minutes until golden brown.
- Prepare the crumble topping by mixing all topping ingredients in a bowl until crumbly.
- Spread the baked apples over the crust, then top with the crumble mixture.
- Reduce the oven heat back to 350°F (176°C) and bake for another 15-25 minutes until warm and bubbly.
- If using the glaze, whisk powdered sugar with almond milk until pourable.
- Allow the bars to cool for about 45 minutes, then lift from the pan, glaze if desired, and slice into 9 squares.
