Instructions
- Preheat the oven to 350°F and line an 8×8 pan with non-stick spray or parchment paper.
- In a small bowl, mix almond butter, coconut oil, maple syrup, and vanilla until well combined.
- In a large bowl, mix almond flour, baking soda, and salt.
- Add the wet ingredients to the dry ingredients and stir until fully mixed.
- Press ⅔ of the almond butter dough into the bottom of the pan and set aside the remaining ⅓.
- In a saucepan, heat lemon juice and coconut oil over medium heat, then whisk in arrowroot powder until smooth.
- Add maple syrup, salt, cinnamon, and nutmeg, then stir in the apples until coated.
- Sauté the apples for about 6-7 minutes until slightly softened.
- Pour the apple mixture over the unbaked almond butter base and crumble the remaining dough on top.
- Bake for 30-32 minutes or until the top is golden.
- Let cool for 30 minutes, then refrigerate for at least an hour before cutting.
- Mix powdered sugar and almond milk for the glaze, if desired, and top the bars.
