Ingredients

The crust

  • 2 cups blanched almond flour
  • ¼ teaspoon salt
  • ¼ cup sweetener
  • 1 large egg
  • 3 tablespoons unsalted butter, melted

The filling

  • 3 pounds Honeycrisp apples, peeled, cored, and thinly sliced or cut into 1 inch cubes
  • ½ cup sweetener
  • ¼ cup brown sweetener
  • 1 teaspoon fresh lemon juice
  • ¼ cup unsalted butter
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt
  • 1 tablespoon cornstarch

The crumb topping

  • 1 cup rolled oats
  • 1 cup almond flour
  • ½ cup sweetener
  • 1 teaspoon cinnamon
  • ½ cup butter, melted

Instructions

  1. Preheat the oven to 350°F and grease a 9.5-inch pie pan.
  2. In a bowl, combine almond flour, sweetener, and salt. In another bowl, mix the egg and melted butter.
  3. Combine wet and dry ingredients, then press the dough into the pie pan and poke holes in it.
  4. Bake the crust for 10 minutes and let it cool for 15 minutes.
  5. In a pot, heat butter and add sliced apples, lemon juice, sweeteners, cinnamon, nutmeg, and salt. Stir for a few minutes.
  6. Cover and simmer for about 6-7 minutes, then add cornstarch and stir until thickened. Let cool for 15 minutes.
  7. Pour the apple filling into the cooled crust.
  8. For the crumb topping, mix oats, almond flour, sweetener, and cinnamon, then add melted butter.
  9. Spread the topping over the apple filling.
  10. Bake for 20-25 minutes until edges are browned, then cool for at least 2 hours before serving.
