Ingredients

Crust

  • 2 cups almond flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp salt
  • 1 large egg
  • 2 tbsp honey
  • 2 tbsp melted coconut oil

Filling

  • 2 medium apples, diced very small
  • 1 tbsp butter (or coconut oil)
  • 2 tbsp coconut sugar (or brown)
  • 1 tsp pumpkin pie spice (or mixture of cinnamon, nutmeg, ginger, cloves)

Instructions

  1. Preheat the oven to 325°F and grease a mini muffin tin.
  2. In a large bowl, whisk together almond flour, baking powder, cinnamon, and salt.
  3. In a separate bowl, combine the egg, honey, and melted coconut oil.
  4. Mix the wet ingredients into the dry ingredients until combined and let the dough rest for 5 minutes.
  5. Press 1-2 tablespoons of dough into each muffin tin, creating a dent in the middle.
  6. Bake for 10-12 minutes until golden brown and let cool completely.
  7. In a saucepan, heat butter and stir in diced apples, coconut sugar, and spices. Cook for 4-5 minutes until softened.
  8. Divide the apple filling among the cooled crusts and serve with whipped cream or enjoy as is.
