Instructions
- Preheat the oven to 325°F and grease a mini muffin tin.
- In a large bowl, whisk together almond flour, baking powder, cinnamon, and salt.
- In a separate bowl, combine the egg, honey, and melted coconut oil.
- Mix the wet ingredients into the dry ingredients until combined and let the dough rest for 5 minutes.
- Press 1-2 tablespoons of dough into each muffin tin, creating a dent in the middle.
- Bake for 10-12 minutes until golden brown and let cool completely.
- In a saucepan, heat butter and stir in diced apples, coconut sugar, and spices. Cook for 4-5 minutes until softened.
- Divide the apple filling among the cooled crusts and serve with whipped cream or enjoy as is.
