Ingredients

Chai-Spiced Caramel

  • 2 tablespoons heavy cream
  • ½ cup white granulated sugar
  • 2 tablespoons unsalted butter
  • teaspoon ground cinnamon
  • teaspoon ground ginger
  • a pinch ground allspice
  • a pinch ground cardamom
  • a pinch ground cloves
  • a pinch salt

Apple Pie Filling

  • 4 small Honey Crisp apples
  • ½ tablespoon lemon juice

Pie Crust

  • 1 double-batch pie crust

Egg Wash

  • 1 large egg
  • 1 tablespoon water

Instructions

  1. Make the chai-spiced caramel by warming the heavy cream and cooking the sugar until light golden brown, then mixing in the cream, spices, and butter until smooth.
  2. In a bowl, toss diced apples with lemon juice.
  3. Roll out the pie crust and cut it to fit the mini pie pans, then line the pans with the dough.
  4. Divide the apple filling among the pie pans and drizzle with caramel sauce.
  5. Cover with a second crust and freeze for 1 hour.
  6. Preheat the oven to 350°F, brush the tops with egg wash, and bake for 25-35 minutes until golden brown.
  7. Allow to cool before serving.
