Instructions
- Make the chai-spiced caramel by warming the heavy cream and cooking the sugar until light golden brown, then mixing in the cream, spices, and butter until smooth.
- In a bowl, toss diced apples with lemon juice.
- Roll out the pie crust and cut it to fit the mini pie pans, then line the pans with the dough.
- Divide the apple filling among the pie pans and drizzle with caramel sauce.
- Cover with a second crust and freeze for 1 hour.
- Preheat the oven to 350°F, brush the tops with egg wash, and bake for 25-35 minutes until golden brown.
- Allow to cool before serving.
