Ingredients

Pie Crust

  • cups all-purpose flour
  • 1 tablespoon granulated sugar
  • teaspoons kosher salt
  • 1 cup unsalted butter
  • cup very cold water
  • 1 large egg (beaten, for egg wash)

Apple Filling

  • 1 pound Honey Crisp or Envy apples
  • 2 teaspoons lemon juice
  • 1 teaspoon lemon zest
  • cup brown sugar
  • 1 tablespoon granulated sugar
  • teaspoon kosher salt
  • 1 tablespoon all-purpose flour
  • ½ teaspoon ground cinnamon
  • teaspoon ground nutmeg

Icing

  • 1 cup powdered sugar (sifted)
  • 3 tablespoons heavy cream
  • 1 tablespoon unsalted butter (melted)
  • ½ teaspoon vanilla extract
  • 1 pinch salt

Instructions

  1. Prepare the pie crust by mixing flour, sugar, and salt, then grating in the cold butter and chilling the mixture.
  2. Add water gradually to form a dough, then chill it for at least 2 hours or overnight.
  3. For the apple filling, peel and dice the apples, then cook them with lemon juice, sugars, salt, flour, cinnamon, and nutmeg for about 10 minutes and let cool.
  4. Roll out the chilled dough and cut it into rectangles, placing them on a parchment-lined baking sheet.
  5. Fill each rectangle with apple filling, brush edges with egg wash, and cover with another rectangle, crimping the edges.
  6. Freeze the assembled pies for about 10 minutes, then preheat the oven to 425°F.
  7. Brush the tops with egg wash and bake for 15 to 20 minutes until golden brown.
  8. Prepare the icing by whisking together the icing sugar, heavy cream, butter, vanilla, and salt, then pipe it onto the cooled pies.
