Ingredients

Pie Crust

  • 6 tablespoons unsalted butter
  • 3 tablespoons vegetable shortening
  • cups all-purpose flour
  • 1 tablespoon granulated sugar
  • ¼ teaspoon salt
  • ½ teaspoon apple cider vinegar
  • ¼ cup ice-cold water

Apple Filling

  • 2 large Granny Smith apples
  • 2 tablespoons brown sugar
  • 1 tablespoon granulated sugar
  • 1 tablespoon unsalted butter
  • ¼ teaspoon ground cinnamon
  • teaspoon ground nutmeg
  • teaspoon salt

Egg Wash

  • 1 large egg
  • 1 tablespoon milk

Brown Sugar Glaze

  • 1 tablespoon unsalted butter
  • 2 tablespoons brown sugar
  • ½ cup powdered sugar
  • 1 pinch cinnamon
  • 1 pinch salt
  • 1 tablespoon milk

Instructions

  1. Chill butter and shortening before starting.
  2. Mix flour, sugar, and salt in a bowl, then cut in the chilled butter and shortening.
  3. Combine apple cider vinegar and ice-cold water, then add to the dry ingredients until a dough forms.
  4. Wrap the dough in plastic and refrigerate for at least 1 hour.
  5. For the filling, simmer apples with sugars, butter, spices, and salt until softened, then cool.
  6. Roll out the dough and cut into 4-inch rounds.
  7. Brush edges of rounds with egg wash, fill with apple mixture, fold, and crimp edges.
  8. Cut slits in the tops, brush with egg wash, and bake until golden.
  9. Prepare the glaze by mixing all glaze ingredients and drizzle over cooled pies.
