Instructions
- Chill butter and shortening before starting.
- Mix flour, sugar, and salt in a bowl, then cut in the chilled butter and shortening.
- Combine apple cider vinegar and ice-cold water, then add to the dry ingredients until a dough forms.
- Wrap the dough in plastic and refrigerate for at least 1 hour.
- For the filling, simmer apples with sugars, butter, spices, and salt until softened, then cool.
- Roll out the dough and cut into 4-inch rounds.
- Brush edges of rounds with egg wash, fill with apple mixture, fold, and crimp edges.
- Cut slits in the tops, brush with egg wash, and bake until golden.
- Prepare the glaze by mixing all glaze ingredients and drizzle over cooled pies.
