Ingredients

Cheddar Pie Crust

  • ½ cup ice cold water
  • 2 tablespoons apple cider vinegar
  • cups all-purpose flour
  • teaspoons granulated sugar
  • teaspoons kosher salt
  • cups unsalted butter
  • 2 ounces aged Cheddar cheese, grated

Apple Filling

  • 2 medium apples (Northern Spy, Idared, Golden Delicious or Honey Crisp)
  • ½ teaspoon freshly squeezed lemon juice
  • ¼ cup granulated sugar
  • 2 tablespoons packed light brown sugar
  • 2 tablespoons tapioca starch or corn starch
  • teaspoon ground cinnamon
  • teaspoon ground nutmeg

Instructions

  1. Combine the flour, sugar, and salt in a bowl for the pie crust.
  2. Grate the cold butter into the flour mixture and mix until it resembles peas.
  3. Add the grated cheddar cheese and mix quickly.
  4. Stir in the ice cold water and vinegar until combined, then form into a cohesive dough.
  5. Divide the dough, shape into squares, wrap in plastic, and refrigerate for at least 2 hours.
  6. For the apple filling, combine diced apples with lemon juice, sugars, starch, cinnamon, nutmeg, and salt in a bowl.
  7. Roll out the dough, cut into rounds, and fill with a heaping teaspoon of apple filling.
  8. Seal the edges with a fork and chill again before baking.
  9. Preheat the oven to 425°F, brush the tops with egg wash, and sprinkle with sugar.
  10. Bake for 15-20 minutes until golden brown.
