Instructions
- Combine the flour, sugar, and salt in a bowl for the pie crust.
- Grate the cold butter into the flour mixture and mix until it resembles peas.
- Add the grated cheddar cheese and mix quickly.
- Stir in the ice cold water and vinegar until combined, then form into a cohesive dough.
- Divide the dough, shape into squares, wrap in plastic, and refrigerate for at least 2 hours.
- For the apple filling, combine diced apples with lemon juice, sugars, starch, cinnamon, nutmeg, and salt in a bowl.
- Roll out the dough, cut into rounds, and fill with a heaping teaspoon of apple filling.
- Seal the edges with a fork and chill again before baking.
- Preheat the oven to 425°F, brush the tops with egg wash, and sprinkle with sugar.
- Bake for 15-20 minutes until golden brown.
