Instructions
- Prepare the pie crust by mixing flour, sugar, and salt, then cutting in the butter until pea-sized.
- Gradually add ice water until the dough forms clumps, then fold in the cheese.
- Divide the dough, flatten into discs, and refrigerate for at least 2 hours.
- For the filling, mix apple slices with sugar, flour, and spices in a large bowl.
- Roll out one disc of dough and place it in a pie dish, then fill with the apple mixture.
- Roll out the second disc and place it over the filling, crimping the edges.
- Brush the top crust with egg wash and sprinkle with coarse sugar if desired.
- Preheat the oven to 400°F (204°C) and chill the pie while the oven heats.
- Bake the pie for 25 minutes, then reduce the temperature to 375°F (190°C) and bake for an additional 30-35 minutes.
- Cool for at least 3 hours before serving to allow the filling to set.
