Ingredients

The crust

  • 1 ½ cups gluten-free all-purpose flour
  • ¾ teaspoon xanthan gum
  • ½ cup cold butter
  • 3 teaspoons granulated sugar
  • ¾ teaspoon kosher salt
  • 6–8 tablespoons ice water

The filling

  • 1 medium to large apple
  • 1 tablespoon butter (optional)
  • ¼ cup raw sugar or granulated sugar
  • ¾ teaspoon ground cinnamon
  • a pinch kosher salt

For brushing

  • 1 large egg yolk
  • 2 tablespoons water or non-dairy milk
  • to taste raw sugar

Instructions

  1. Prepare the crust by blending flour, butter, sugar, and salt in a food processor, then add ice water until crumbly.
  2. Shape the dough into a ball, flatten it, wrap it, and chill for at least an hour.
  3. For the filling, cook diced apples with butter, sugar, cinnamon, and salt until soft.
  4. Rest the dough at room temperature, then roll it out and cut into circles.
  5. Fill each circle with the apple filling, seal the edges with a fork, and chill again.
  6. Preheat the oven, brush the pies with egg wash, and bake until golden brown.
