Instructions
- Prepare the pie crust and chill it for 2 hours.
- Combine the diced apples, sugar, butter, cinnamon, nutmeg, and allspice in a saucepan and simmer for 2 minutes, then cool for 30 minutes.
- Roll out the chilled pie dough and cut into circles.
- Preheat the oven to 375°F (191°C) and line baking sheets with parchment paper.
- Fill half of the dough circles with 2 tablespoons of filling, place the top circles with slits on top, and seal the edges.
- Brush the tops with egg wash and sprinkle with coarse sugar if desired.
- Bake for 28–32 minutes until golden brown, then cool on a wire rack.
