Ingredients

The pie crust

  • 2 crusts homemade pie crust

The filling

  • 3 medium apples, peeled and diced
  • cup granulated sugar
  • 2 Tablespoons unsalted butter
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground allspice
  • 1 large egg (for egg wash)
  • 1 Tablespoon milk (for egg wash)
  • optional homemade salted caramel (for topping)

Instructions

  1. Prepare the pie crust and chill it for 2 hours.
  2. Combine the diced apples, sugar, butter, cinnamon, nutmeg, and allspice in a saucepan and simmer for 2 minutes, then cool for 30 minutes.
  3. Roll out the chilled pie dough and cut into circles.
  4. Preheat the oven to 375°F (191°C) and line baking sheets with parchment paper.
  5. Fill half of the dough circles with 2 tablespoons of filling, place the top circles with slits on top, and seal the edges.
  6. Brush the tops with egg wash and sprinkle with coarse sugar if desired.
  7. Bake for 28–32 minutes until golden brown, then cool on a wire rack.
