Instructions
- Prepare the crust by combining flour, salt, coconut oil, and maple syrup in a food processor and pulse until crumbly.
- Add ice water gradually until the dough comes together, then divide into two balls and set aside.
- For the filling, cook chopped apples with lemon juice, maple syrup, cinnamon, and nutmeg in a pot until fork-tender.
- Preheat the oven to 375 degrees.
- Roll out the dough to ⅛ inch thickness and cut into 3-inch circles.
- Place a tablespoon of filling on each circle, brush edges with water, and top with another circle, sealing with a fork.
- Brush the tops with the strained cooking liquid and bake for about 20 minutes until lightly browned.
- Cool on a wire rack and store in an airtight container.
