Ingredients

  • cup solid coconut oil
  • 1 tbsp pure maple syrup
  • cup ice water

Filling Ingredients

  • 2 medium apples
  • 1 tsp lemon juice
  • 3 tbsp pure maple syrup
  • ¼ tsp cinnamon
  • tsp nutmeg

Instructions

  1. Prepare the crust by combining flour, salt, coconut oil, and maple syrup in a food processor and pulse until crumbly.
  2. Add ice water gradually until the dough comes together, then divide into two balls and set aside.
  3. For the filling, cook chopped apples with lemon juice, maple syrup, cinnamon, and nutmeg in a pot until fork-tender.
  4. Preheat the oven to 375 degrees.
  5. Roll out the dough to ⅛ inch thickness and cut into 3-inch circles.
  6. Place a tablespoon of filling on each circle, brush edges with water, and top with another circle, sealing with a fork.
  7. Brush the tops with the strained cooking liquid and bake for about 20 minutes until lightly browned.
  8. Cool on a wire rack and store in an airtight container.
